1Heat 100 grams of vegetable oil in a wok over medium heat. Add the sliced Shallots and fry gently, stirring occasionally, until golden brown and crispy. Remove the crispy Shallots with a slotted spoon and set aside. Reserve the Shallot oil in the wok.
2In a small bowl, marinate the Minced pork with 5 grams of Light soy sauce, 5 grams of Shaoxing wine, 1 gram of White pepper, and the Cornstarch. Mix well.
3Heat the reserved Shallot oil in the wok over medium-high heat. Add the Minced garlic and stir-fry for 15 seconds until fragrant. Add the marinated Minced pork and stir-fry, breaking it apart, until cooked through and lightly browned. Remove the cooked Minced pork from the wok and set aside.
