Place the cleaned Fresh octopus in a large bowl. Add the Salt and Rice vinegar. Vigorously massage the Fresh octopus for 5-7 minutes to tenderize it. This breaks down the fibers and removes excess slime.

Rinse the Fresh octopus very thoroughly under cold running water to remove all traces of Salt and Rice vinegar and any remaining slime.
