1Bring 1000g water to a rolling boil in a large saucepan. Add 100g tapioca pearls and stir gently to prevent sticking. Once the tapioca pearls float, reduce heat to medium-low and simmer for 15-20 minutes, or according to package instructions, until soft and chewy. Stir occasionally.
2While the tapioca pearls are cooking, prepare the brown sugar syrup. Combine 100g brown sugar and 100g water in a small saucepan. Heat over medium heat, stirring until the brown sugar is fully dissolved and the mixture thickens slightly into a syrup. Remove from heat.
3Once the tapioca pearls are cooked, drain them thoroughly and immediately transfer them to a bowl. Add 50g of the prepared brown sugar syrup to the warm tapioca pearls and stir well to coat. Set aside.
