1Scrub the Burdock root thoroughly with a brush or the back of a knife to remove any dirt, then peel its skin thinly. Slice the Burdock root diagonally into very thin, coin-like pieces, about 1-2mm thick.
2Place the sliced Burdock root into a bowl of Water and soak for 10-15 minutes to remove any bitterness and prevent discoloration. Drain the Burdock root thoroughly and pat very dry with paper towels.
3In a shallow dish, toss the dried Burdock root with the Potato starch until each piece is lightly and evenly coated.
