Gently clean 300g fresh shiitake mushrooms with a damp cloth. Carefully remove the stems, leaving only the caps. Lightly score a cross pattern on the top of each shiitake mushroom cap for decoration.

Wrap 50g firm tofu in a clean cloth or paper towel and gently press to remove excess water. Crumble the pressed firm tofu into a mixing bowl.

To the bowl with crumbled firm tofu, add 100g ground beef, 15g finely chopped green onion, 5g minced garlic, 10g soy sauce, 5g sesame oil, and 1g black pepper. Mix all ingredients thoroughly by hand until well combined.
