Thoroughly clean the Fresh octopus by removing the beak, eyes, and any internal organs. Rinse it well under cold running water.

In a large pot, add the cleaned Fresh octopus, Black peppercorns, and Bay leaves. Add just enough water to barely cover the Fresh octopus. Bring to a boil, then reduce heat and simmer gently for 60-75 minutes, or until the Fresh octopus is very tender when pierced with a fork. Do not add salt at this stage.

While the Fresh octopus is cooking, peel the Potatoes and cut them into 2-3 cm cubes. Halve the Cherry tomatoes. Peel and finely slice the Garlic. Coarsely chop the Fresh flat-leaf parsley.
