1Carefully clean the fresh anchovies by removing the head and entrails. Open each anchovy flat like a book and remove the central bone, leaving the tail intact. Rinse them gently under cold water and pat them thoroughly dry with kitchen paper.
2Place the 00 flour in a shallow dish.
3Heat the extra-virgin olive oil in a deep frying pan or a heavy-bottomed pot to approximately 170-180°C (340-350°F).
