Rinse the glutinous rice thoroughly and soak it in cold water for at least 30 minutes. Drain well before use.

Clean the chicken by removing any excess fat from the cavity and around the vent. Trim the wing tips if desired.

Carefully stuff the chicken cavity with the drained glutinous rice, fresh ginseng root, dried jujubes, whole garlic cloves, and peeled chestnuts. Do not overstuff.
