1Peel the ripe mangoes, remove the pits, and cut the mangoes into medium-sized chunks.
2In a large, heavy-bottomed pot, combine the piloncillo and water over medium heat. Stir continuously until the piloncillo is completely dissolved, forming a thick syrup.
3Add the mango chunks, Mexican cinnamon stick, lime juice, and salt to the pot with the piloncillo syrup.
