1Combine 1000 grams Water and 10 grams Kombu in a pot. Let the Kombu soak for 30 minutes.
2Heat the pot over medium-low heat. Just before the Water boils, remove the Kombu.
3Bring the Water to a boil, then turn off the heat. Add 20 grams Katsuobushi and let it steep for 5 minutes.
