1Rinse the Pork ribs thoroughly under cold water. Place the Pork ribs in a large pot, cover with cold Water, and bring to a rolling boil. Skim off any foam and impurities that rise to the surface. Continue to boil for 5 minutes, then drain the Pork ribs and rinse them again under cold water to remove any remaining scum.
2Peel the Winter melon, remove the seeds and fibrous core, then cut the Winter melon into large chunks, approximately 3-4 cm in size.
3Slice the Ginger into thick pieces. Cut the Scallions into 5 cm lengths, reserving half for garnish.
