1Rinse the Dried Borlotti beans thoroughly after soaking overnight, then drain.
2Clean the Fresh pork rind, blanch it in boiling water for 5 minutes, then drain and cut into strips.
3Dice the Pancetta tesa finely. Finely dice the yellow onion, carrot, and celery stalk for the soffritto. Mince the garlic cloves.
