1In a large mixing bowl, combine the Masa de maíz, grated Piloncillo, Canela molida, and Sal. Mix thoroughly until well combined.
2Melt 50g of the Mantequilla sin sal. Add the melted Mantequilla sin sal and 150g of the Agua to the masa mixture. Mix with your hands, gradually adding more Agua until a smooth, thick batter is formed, similar to pancake batter. It should be pourable but not too thin.
3Heat a comal or a heavy-bottomed skillet over medium heat. Lightly grease the comal with a small amount of the remaining Mantequilla sin sal.
