1In a small bowl, combine 100g of the Water with the Fresh yeast and Sugar. Stir gently until the Fresh yeast dissolves, then let it sit for 5-10 minutes until foamy.
2In a large mixing bowl, combine the 00 flour and Fine sea salt. Create a well in the center.
3Pour the activated Fresh yeast mixture and the remaining 250g Water into the well. Add 30g of the Extra-virgin olive oil.
