1Place the Poha in a colander and rinse it gently under cold running water for about 1-2 minutes until it softens slightly but retains its shape. Ensure it is not soggy. Let it drain completely.
2Finely chop the Onion and Potato. Slit the Green chili lengthwise. Roughly chop the Fresh cilantro.
3Heat the Vegetable oil in a large pan or kadai over medium heat. Once hot, add the Mustard seeds and let them splutter.
