In a small bowl, dissolve the Fresh yeast with a pinch of the Granulated sugar in the lukewarm Whole milk. Let it sit for 5-10 minutes until foamy.

In a large mixing bowl or stand mixer with a dough hook, combine the 00 flour, remaining Granulated sugar, Salt, and Lemon zest. Add the mashed Potatoes, Eggs, and the activated yeast mixture.
