1Thoroughly clean the pig large intestine by rinsing it inside and out with cold water. Rub the pig large intestine vigorously with 10 grams of salt to remove impurities and odors, then rinse repeatedly until the water runs clear and the intestine is no longer slimy. Turn it inside out and repeat the cleaning process.
2Soak the glutinous rice in water for at least 2 hours. Soak the glass noodles in warm water for 30 minutes until soft.
3Blanch the mung bean sprouts in boiling water for 1 minute, then drain and cool. Chop the blanched mung bean sprouts finely. Finely chop the green onion. Mince the garlic and ginger.
