1Place Eggs in a saucepan, cover with water, and bring to a boil. Cook for 8-10 minutes until hard-boiled. Drain, cool, peel, and then halve each egg lengthwise.
2In a mixing bowl, combine Gram flour, Rice flour, Red chili powder, Turmeric powder, Asafoetida, Ginger-garlic paste, finely chopped Curry leaves, and Salt.
3Gradually add Water to the dry ingredients, whisking continuously to form a thick, smooth batter without any lumps. The batter should be thick enough to coat the back of a spoon.
