1Rinse 500g glutinous rice thoroughly under cold water until the water runs clear. Place the rinsed glutinous rice in a large bowl, cover with fresh water, and soak for at least 4 hours, or preferably overnight.
2In separate bowls, soak 30g dried shiitake mushrooms in 200g warm water and 20g dried shrimp in 100g warm water for at least 30 minutes, or until softened. Reserve the mushroom soaking liquid.
3Drain the softened dried shiitake mushrooms, remove stems, and thinly slice the caps. Drain the softened dried shrimp.
