1Thoroughly clean the Octopus, removing the beak and eyes. If frozen, thaw completely.
2In a large pot, bring a generous amount of water to a rolling boil. Add the Bay leaf, Black peppercorns, and 5 grams of Sea salt.
3To tenderize the Octopus, dip it into the boiling water for 10 seconds, then remove. Repeat this process 3-4 times. This helps to curl the tentacles and prevent the skin from tearing during cooking.
