1Finely chop the Scallion, separating the white and green parts. Mince the Ginger.
2In a small bowl, combine Light soy sauce, Oyster sauce, Sesame oil, and White pepper. Mix well to form the dressing.
3Bring a large pot of water to a rolling boil. Add the Fresh thin Cantonese egg noodles and cook according to package instructions, usually 1-2 minutes, until al dente. Drain thoroughly and set aside.
