Rinse the rehydrated sea cucumber thoroughly. Cut the rehydrated sea cucumber into 1.5cm thick slices. Blanch the rehydrated sea cucumber in boiling water for 2 minutes, then drain and set aside.

Cut the spring onion into 5cm sections. Slice the ginger. Smash the garlic.
