1Rinse the rehydrated sea cucumber thoroughly. Cut the rehydrated sea cucumber into 1.5cm thick slices. Blanch the rehydrated sea cucumber in boiling water for 2 minutes, then drain and set aside.
2Cut the spring onion into 5cm sections. Slice the ginger. Smash the garlic.
3Heat the vegetable oil in a wok over medium-high heat. Add the ginger and garlic, stir-fry until fragrant, about 30 seconds.
