1Slice the Pork belly thinly against the grain. In a bowl, marinate the sliced Pork belly with 15g Shaoxing wine, 10g Light soy sauce, and Cornstarch. Mix well and set aside for 15 minutes.
2Prepare the Winter bamboo shoots by slicing them into thin strips. If using canned bamboo shoots, blanch them in boiling water for 2-3 minutes, then drain thoroughly.
3Mince the Garlic and Ginger. Slice the Scallions, separating the white and green parts. Snip the Dried red chilies into 1-inch pieces.
