1Gently wipe the Kombu with a damp cloth to remove any surface dust, being careful not to remove the white powdery umami deposits.
2Place the Kombu in a large pot with Water and let it soak for 30 minutes.
3Bring the pot to a very gentle simmer over medium-low heat. Cook the Kombu for 20 minutes until it is tender. Do not allow the water to boil vigorously.
