1Soak the sweet potato vermicelli in hot water for 20-30 minutes until pliable but still firm. Drain and set aside.
2Finely mince the garlic and ginger. Chop the scallions, separating the white and green parts.
3Heat the peanut oil in a wok or large pot over medium-high heat. Add the ground pork and stir-fry until browned and crumbly. Remove the ground pork from the wok and set aside, leaving a small amount of oil in the wok.
