1To prepare the cannoli shells, combine the 00 flour, granulated sugar, cocoa powder, and salt in a large bowl.
2Cut the cold unsalted butter into small pieces and add it to the dry ingredients. Rub the butter into the flour mixture with your fingertips until it resembles coarse crumbs.
3Make a well in the center and add the Marsala wine and half of the beaten egg. Mix with a fork, then knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. If the dough is too dry, add a little more of the remaining beaten egg.
