1. Rehydrate the Dried Gondeure by soaking it in plenty of cold water overnight, or for at least 6-8 hours, until softened. Drain the water.

2. Boil the rehydrated Gondeure in fresh water for 30-40 minutes until tender. Drain and rinse in cold water, then squeeze out as much excess water as possible. Finely chop the Gondeure.

3. In a large mixing bowl, combine the Short-grain rice flour and Fine sea salt. Gradually add the Water, mixing until a shaggy dough forms. Knead the dough for about 5-7 minutes until it becomes smooth and pliable.
