2Drain the soaked Azuki beans and transfer them to a large pot. Add fresh Water to cover the beans by about 5 cm. Bring to a rolling boil over high heat, then boil for 5 minutes. Drain the Azuki beans and discard the Water.
3Return the Azuki beans to the pot. Add enough fresh Water to cover the beans by approximately 5 cm again. Bring to a boil, then reduce the heat to low, partially cover the pot, and simmer for 1.5 to 2 hours, or until the Azuki beans are very tender and easily crushed between your fingers. Add more hot Water during simmering if needed to keep the beans submerged.
