1Wash the Japanese short-grain rice thoroughly until the water runs clear, then cook according to package instructions in a rice cooker or pot.
2While the rice cooks, prepare the sauce by combining Koikuchi soy sauce, Mirin, Sake, Granulated sugar, and Dashi stock in a small bowl.
3Heat a large skillet over medium-high heat. Add the thinly sliced Pork belly and cook until browned and crispy, rendering out much of the fat. Drain excess fat from the skillet.
