1Rinse the dried red beans thoroughly. Place the dried red beans in a pot, add enough water to cover them, bring to a boil, and cook for 5 minutes. Drain and discard this first batch of water to remove bitterness.
2Return the red beans to the pot, add fresh water (approximately 600 grams), and bring to a boil. Reduce heat to low, cover, and simmer for 1 to 1.5 hours, or until the red beans are very tender and easily mashed.
3Drain most of the cooking water from the red beans, leaving just a small amount at the bottom. Mash the red beans thoroughly with a potato masher or the back of a spoon until smooth or slightly chunky, as preferred.
