Hunan style stir-fried shredded pork with preserved long beans

10 g chili pepper
5 g chinkiang vinegar
10 g cornstarch
5 g Dark soy sauce
20 g Doubanjiang
20 g garlic
15 g ginger
1 g pepper
300 g pork loin
200 g Preserved long beans
30 g scallions
5 g sesame oil
15 g Shaoxing wine
15 g soy sauce
3 g sugar
50 g vegetable oil

Shred the Pork loin into thin strips approximately 5cm long. In a bowl, combine the shredded Pork loin with 5g of Light soy sauce, 5g of Shaoxing wine, 1g of White pepper, and the Cornstarch. Mix well and marinate for 15 minutes.

Rinse the Preserved long beans thoroughly under cold water to remove excess saltiness. Squeeze out any excess water and chop them into 1cm pieces.

Mince the Garlic and Ginger. Separate the white and green parts of the Scallions, chopping both. Cut the Dried red chilies into 2cm pieces.
