Thoroughly clean the Fresh oysters under cold running water. Carefully shuck each Fresh oyster, discarding the top shell and keeping the oyster meat in the bottom half shell. Arrange the shucked Fresh oysters on a heatproof platter or baking sheet.

Place Vermicelli in a bowl and cover with hot water. Let it soak for 5-7 minutes until softened, then drain well and cut into 5cm lengths.
