1In a small bowl, combine the active dry yeast with 30g of the granulated sugar and the whole milk. Stir gently and let it sit for 5-10 minutes until foamy, indicating the active dry yeast is active.
2In a large mixing bowl, whisk together the all-purpose wheat flour (for the dough), the remaining 70g of granulated sugar, Mexican cinnamon powder, and salt.
3Add the large eggs and the activated yeast mixture to the dry ingredients. Begin to mix.
