11. Rinse the Black beans thoroughly. Place the Black beans in a large pot with 1500 grams of Water and half of the White onion and half of the Garlic cloves. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the Black beans are tender. Do not drain the Black beans; reserve the cooking liquid.
22. While the Black beans are cooking, prepare the Nopales. Bring a separate pot of water to a boil. Add the diced Nopales and cook for 10-15 minutes until tender and the mucilage has been released. Drain the Nopales and rinse them thoroughly under cold water to remove any remaining sliminess. Set aside.
33. Prepare the chile sauce. Remove the stems and seeds from the Guajillo chiles. Place the Guajillo chiles in a small pot with 500 grams of Water and bring to a simmer for 10 minutes until softened. Drain the Guajillo chiles, reserving a small amount of the soaking liquid.
