1Dice the yellow onion, carrot, and zucchini into small, uniform pieces. Mince the garlic. Chop the green onions, separating the white and light green parts from the darker green parts.
2Pat the shrimp dry with paper towels. Season the shrimp with a pinch of salt and black pepper.
3Heat 15 grams of vegetable oil in a large wok or frying pan over medium-high heat. Add the seasoned shrimp and stir-fry until pink and cooked through, about 2-3 minutes. Remove the cooked shrimp from the pan and set aside.
