1Carefully peel the Preserved eggs and cut each into 4-6 wedges. Arrange the Preserved eggs neatly on a serving plate.
2Finely mince the Garlic. Thinly slice the green parts of the Scallions for garnish, and finely chop the white parts of the Scallions.
3Roughly chop the Dried chilies and lightly crush the Sichuan peppercorns.
