1In a small bowl, combine 180g water warmed to 40°C with 4g active dry yeast and 5g of the granulated sugar. Let it sit for 5-10 minutes until foamy.
2In a large mixing bowl, combine 300g All-purpose flour, 15g of the granulated sugar, and 3g salt.
3Pour the yeast mixture into the flour mixture. Mix with chopsticks or a spatula until a shaggy dough forms.
