1Scale the Mackerel fillet if necessary, then pat dry.
2Sprinkle 30 grams of Salt generously over both sides of the Mackerel fillet. Place in a shallow dish, cover, and refrigerate for 30 minutes to 1 hour to cure.
3Rinse the Mackerel fillet thoroughly under cold running water to remove all Salt. Pat very dry with paper towels.
