Pat the Shrimp very dry with paper towels. Roughly chop the Shrimp into small pieces, then mince further with a cleaver or knife until a coarse paste forms. Do not over-process into a smooth puree.

In a medium bowl, combine the minced Shrimp, Egg white, Cornstarch, Shaoxing wine, Sesame oil, White pepper, Scallions, Ginger, and Oyster sauce. Mix thoroughly until all ingredients are well incorporated and the paste is slightly sticky.

Take the White bread slices and trim off all the crusts. Cut each slice diagonally into two triangles.
