1To prepare the piloncillo syrup, combine the piloncillo, water, and Mexican cinnamon stick in a medium saucepan.
2Heat the mixture over medium heat, stirring occasionally, until the piloncillo has completely dissolved and the syrup has thickened slightly, about 10-15 minutes. Remove the Mexican cinnamon stick and keep the syrup warm.
3Slice the bolillo bread into pieces approximately 2 centimeters thick.
