Peel the Potatoes and cut them into 2-3 cm cubes. Boil the Potato cubes in salted water until very tender, about 15-20 minutes. Drain well and return to the pot.

While the Potatoes are boiling, thinly slice the Cucumber into rounds. Place the Cucumber slices in a bowl, sprinkle with 2 grams of Salt, and let sit for 10 minutes to draw out moisture. Squeeze out excess water thoroughly.

Peel the Carrot and cut it into small dice. Boil the Carrot dice in a small pot of water for 2-3 minutes until tender-crisp. Drain well.
