Thinly slice the Flank steak against the grain. In a bowl, combine sliced Flank steak with 10g Light soy sauce, 5g Dark soy sauce, 10g Shaoxing wine, 10g Cornstarch, 1g White pepper, and 2g Sesame oil. Mix well and marinate for 15 minutes.

Gently separate the Fresh Hor Fun noodles to prevent tearing. If they are clumped, briefly rinse with warm water and drain thoroughly.

Wash and trim Bean sprouts. Cut Scallions into 5cm lengths, separating the white and green parts. Mince Ginger and Garlic.
