Cut 1200g of lamb shoulder into large cubes and season thoroughly with 5g of salt and 2g of pepper.
Heat 60g of olive oil in a heavy pot and brown the lamb cubes deeply on all sides.
Add 300g of sliced onions, 400g of sliced bell peppers, and 30g of minced garlic to the pot, browning them well.
