1Bring 1000 grams of Water to a rolling boil in a medium pot. Add the Small Sago Pearls and cook for 15-20 minutes, stirring occasionally, until most pearls are translucent with a tiny white dot in the center.
2Remove the pot from heat, cover, and let the Small Sago Pearls sit for another 10 minutes until fully translucent. Drain the Small Sago Pearls and rinse them thoroughly under cold running water to remove excess starch. Set aside.
3Peel and deseed the Ripe Mango. Dice 300 grams of the Ripe Mango flesh into small cubes and set aside. Puree the remaining 500 grams of Ripe Mango flesh until smooth.
