1Thoroughly wash the Japanese short-grain rice under cold running water until the water runs clear. Place the washed Japanese short-grain rice in a bowl and soak in fresh water for at least 30 minutes, then drain well.
2Gently wipe the Matsutake mushrooms with a damp cloth to remove any dirt; do not wash under running water to preserve their delicate aroma. Trim the very bottom of the stems if woody, then slice the Matsutake mushrooms thinly.
3In a separate bowl, combine the Dashi stock, Usukuchi soy sauce, Mirin, Sake, and Salt, stirring until the Salt is fully dissolved.
