1Begin by preparing the Guajillo chiles: remove stems and seeds. Place the Guajillo chiles in a small pot with water, bring to a boil, then remove from heat and let them rehydrate for 15 minutes until softened.
2While chiles rehydrate, finely chop the White onion and mince the Garlic. Wash and roughly chop the Celery.
3Heat the Vegetable oil in a medium pot over medium heat. Add the chopped White onion and sauté until translucent, about 5 minutes. Add the minced Garlic and chopped Celery, cooking for another 5-7 minutes until the Celery begins to soften.
