Heat Ghee in a heavy-bottomed pan or kadai over medium heat.
Add Mustard seeds, Cumin seeds, Fenugreek seeds, Cinnamon stick, Cloves, Cardamom pods, and Star anise. Allow Mustard seeds to splutter.
Add Green chilies and Curry leaves. Sauté for a few seconds until fragrant.
