1Rinse 100g of dried red beans thoroughly and soak them in cold water overnight, or for at least 4 hours.
2Drain the soaked red beans, place them in a pot with 500g of fresh water, and bring to a boil. Reduce heat and simmer for 60-90 minutes, or until the red beans are tender.
3Add 50g of rock sugar to the simmering red beans and continue to cook for another 10 minutes, stirring until the rock sugar is fully dissolved. Drain the red beans and set aside to cool.
