1Crack the Eggs into a bowl and whisk thoroughly with a pinch of White Pepper until well combined.
2Wash the Fresh Red Chilies, remove stems, and slice them thinly on the diagonal. Finely mince the Garlic and Ginger. Slice the Scallions into 2-inch segments, separating the white and green parts.
3Heat 30 grams of Cooking Oil in a wok over high heat until shimmering. Pour in the whisked Eggs and quickly scramble them, breaking them into large pieces as they set. Cook until just firm but still tender, then remove the Eggs from the wok and set aside.
