2Blanch beef short ribs: Place the drained beef short ribs in a pot, cover with water, bring to a boil, and cook for 10 minutes. Drain and rinse the beef short ribs under cold water to remove impurities. Cut any large pieces of fat.
3Prepare Galbi Jjim sauce: In a large bowl, combine 120 grams soy sauce, 30 grams sugar, 40 grams mirin, 20 grams sesame oil, 30 grams minced garlic, 10 grams minced ginger, 40 grams chopped spring onions, 150 grams grated Asian pear, and 3 grams black pepper. Mix well.
